POLARIZED PLUG

This appliance has a polarized plug (one blade is wider than the other). As a safety feature, this

plug fits in a polarized outlet only one way. If the plug does not fit into the outlet, reverse the

plug and try again. If it still does not fit, contact a qualified electrician. Do not attempt to defeat

this safety feature.

A short power-supply cord is provided to reduce the hazards resulting from entanglement or

tripping over a longer cord.

An extension cord may be used with care; however, the marked electrical rating shall be at

least as great as the electrical rating of this appliance. The extension cord should not be

allowed to drape over the tabletop where it can be pulled on by children or tripped over.

This appliance is for HOUSEHOLD USE ONLY. It may be plugged into any AC electrical outlet

(ordinary household current). Do not use any other electrical outlet.

LINE CORD SAFETY TIPS

1. Never pull or yank on cord or the appliance.

2. To insert plug, grasp it firmly and guide it into outlet.

3. To disconnect appliance, grasp plug and remove it from outlet.

4. Before each use, inspect the line cord for cuts and/or abrasion marks. If any are found, this

indicates that the appliance should be serviced and the line cord replaced. Please return it to

our Service Department or to an authorized service representative.

5. Never wrap the cord tightly around the appliance, as this could place undue stress on the

cord where it enters the appliance and cause it to fray and break.

DO NOT OPERATE APPLIANCE IF THE LINE CORD SHOWS ANY DAMAGE, OR IF APPLIANCE

WORKS INTERMITTENTLY OR STOPS WORKING ENTIRELY.

IMPORTANT

During the first few minutes of initial use, you may notice smoke and/or a slight odor. This is normal

and should quickly disappear. It will not recur after appliance has been used a few times.

BEFORE USING

1. Carefully unpack the slow cooker.

2. Wash cooking pot and glass lid in warm, soapy water. Rinse well and dry thoroughly.

3. Wipe interior and exterior surfaces of the base with a soft, moist cloth to remove dust particles

collected during packing and handling. NEVER IMMERSE THE BASE, ITS CORD OR PLUG IN

WATER OR ANY OTHER LIQUID.

4. Slow cooker should be operated before initial use. After cleaning unit, place cooking pot inside

the base. Pour 2 cups of water into the cooking pot and cover with lid. Plug slow cooker into

electrical wall outlet and turn to HIGH setting. Allow to operate for approximately 20 minutes.

5. After 20 minutes, switch Off and unplug. Allow unit to cool. Remove cooking pot, and discard

water. Rinse the cooking pot, dry thoroughly, and replace it in the base.

USING A STONEWARE COOKING POT

Like any fine ceramic, the stoneware cooking pot may crack or break if not properly handled.

To prevent damage:

•Never subject the cooking pot to sudden changes in temperature. NEVER place it where it can

come in contact with direct heat (e.g., on top of a range or under a broiler). DO NOT place it in

a freezer.

•Always place foods into the cooking pot when it is at room temperature; then place pot into

base before turning on.

• NEVER heat the cooking pot when it is empty.

•To avoid damage to the interior of the cooking pot, always use cooking tools made of plastic,

rubber, wood or smooth-edged metal. DO NOT use sharp-edged metal tools, such as forks

or knives.

•Cooking pot is microwave-safe, but its glass lid is not. To avoid breakage, do not put glass lid

in microwave oven. When removing the cooking pot from a microwave, be sure to use

potholders or oven mitts.

•Do not use cooking pot for reheating foods or for general food storage.

•Always use potholders or oven mitts when removing pot from base. Do not set cooking pot

directly on countertop or table; use a trivet or hot pad.

•Unplug unit and allow to cool after using. Do not pour cold water into hot stoneware

cooking pot.

HOW TO USE

CARE OF GLASS LID

To prevent cracking or breaking of the glass lid, which may cause personal injury, cover should be

treated with special care.

CAUTIONS: Glass lid may shatter if it is exposed to direct heat or subjected to severe

temperature changes. Chips, cracks or deep scratches may also weaken the lid.

• KEEP LID AWAY FROM broiler, microwave oven, hot stovetop burners, oven heat vents. If lid has

been utilized in any of these locations, do not use it again, even if there are no signs of damage.

Order a replacement lid immediately.

• IF LID BECOMES CHIPPED, CRACKED OR SCRATCHED, do not use it. Discard it and order

a replacement. See coupon for details.

• ALWAYS LET LID COOL on a dry, heat-resistant surface before handling. Do not place it on cold

or wet surfaces, as this may cause it to crack or shatter.

HOW TO USE

Using a slow cooker is easy but different from conventional cooking. To help you, this manual

contains many helpful hints and recipes for successful slow cooking. Many more slow cooker

recipe books are available in libraries and bookstores. Keep these materials handy whether

preparing favorite recipes or trying something new.

This slow cooker has three settings: LOW, HIGH and AUTO. Use the recommended guidelines

offered in recipe being used to determine cooking time and heating position. Dishes can be

prepared well in advance of mealtime and cooking time regulated so that food is ready to serve at

a convenient time. A general rule of thumb for most slow cooker meat-and-vegetable combos is:

Other favorite recipes may be adapted to the slow cooker. All times listed in the following chart are

approximate and should serve only as cooking guidelines.

1. Prepare recipe according to instructions.

2. Place food in cooking pot and cover.

3. Plug slow cooker into wall outlet and select setting desired: LOW, HIGH or AUTO.

4. When food is ready to be served, turn slow cooker Off, and unplug it from the wall outlet.

5. Remove lid.

CAUTION: When removing lid, grasp the knob and lift to allow steam to escape before setting

cover aside. To avoid burns, always hold lid so that escaping steam flows away from hands

and face.

6. Grasp cooking pot by the handles and remove it from the base.

7. Serve contents. If serving directly from the cooking pot, always place a trivet or protective

padding under pot before placing it on a table or countertop.

CARE AND CLEANING

This appliance contains no user serviceable parts. Do not try to repair it yourself. Refer it to

qualified service personnel if servicing is needed.

PRECAUTIONS

• Always unplug unit and allow to cool before cleaning.

•Always handle cooking pot and cover carefully. Avoid hitting pot or cover against faucet or

other hard surfaces.

•Do not touch sides of slow cooker base while food is cooking. Always use handles on the base.

Use potholders or oven mitts to lift the cooking pot.

TO CLEAN:

This appliance should be cleaned after every use.

After unit has been allowed to cool, wash cooking pot and cover in warm, soapy water. Rinse well

and dry. If food sticks to the surface of the cooking pot, fill the pot with warm, soapy water and

allow it to sit for a few hours before cleaning.

Wipe interior and exterior surfaces of the base with a soft, slightly damp cloth or sponge. NEVER

IMMERSE THE BASE IN WATER.

NEVER USE ABRASIVE CLEANSERS OR SCOURING PADS TO CLEAN THE COOKING POT OR BASE,

AS THESE CAN DAMAGE THE SURFACES.

Dishwasher Cleaning

Stoneware cooking pot and glass lid may be cleaned in an automatic dishwasher. To prevent

damage, position them in rack so they do not hit each other or other items during cleaning.

Special Cleaning

If cooking pot becomes stained, clean with a non-abrasive cleanser or apply a paste of baking

soda with a soft cloth. To remove water spots or mineral deposits, wipe with distilled white vinegar,

or pour a small amount into pot and let it soak. After cleaning, wash pot in warm, soapy water,

rinse and dry.

TO STORE:

Be sure all parts are clean and dry before storing. Store appliance in a clean, dry place. Never

store it while it is hot or wet. To store, place cooking pot inside the base and the glass lid over the

pot. Never wrap cord tightly around the appliance; keep it loosely coiled.

HELPFUL HINTS IN USING THE SLOW COOKER

•The lid of the slow cooker does not form a tight fit on the cooking pot but should be centered

on the pot for best results. Do not remove the cover unnecessarily – this will result in a major

heat loss.

•Stirring is not necessary when slow cooking. However, if cooking on HIGH, stirring occasionally

will help to distribute flavors throughout the recipe.

•For best results, the slow cooker should be at least half-filled.

•If cooking soups or stews, allow a 2-inch space between the food and the top of the cooking

pot, so ingredients can come to a simmer.

•Less tender, cheaper cuts of meat are better candidates for slow cooking than more expensive

varieties. When possible, remove excess fat before cooking. If recipe calls for browning the

meat, brown it on a rangetop using a separate cooking utensil before placing meat in

cooking pot.

•Add fresh or thawed fish or seafood to cooking pot an hour before serving, as these ingredients

can fall apart during long hours of cooking.

•Since raw vegetables usually take longer to cook than meats, cut vegetables into uniform,

bite-sized pieces (about 1/2 inch in diameter) before adding them to cooking pot.

•If recipe calls for milk, sour cream or other fresh dairy products, add them just prior to serving,

as these ingredients tend to break down during long hours of cooking. If preferred, substitute

condensed creamed soups (undiluted) or evaporated milk. Processed cheese may be

substituted for naturally aged cheese.

•Rice or pasta may be cooked separately or added uncooked to recipes no more than two hours

before serving. If adding uncooked pasta, there should be at least 2 cups of liquid in the pot.

Stir occasionally to keep pieces from sticking together.

•To thicken juices or make gravy at the end of the cooking process, make a smooth mixture

consisting of 2-4 tablespoons of cornstarch or flour and 1/4 cup water or 2 tablespoons of

butter. Remove cooked food from pot, letting juices remain. Add mixture to juices, set control

at HIGH, and stir until liquid thickens.

•Don’t worry if food is allowed to cook a bit longer than specified. Remember, the slow cooker –

as its name implies – cooks very slowly.

•To keep foods warm for serving, turn control to the LOW setting.

ADAPTING RECIPES

General Hints

•The LOW or AUTO setting is recommended for all-day cooking. Most meat-and-vegetable

combinations require at least 7 hours on LOW. On the AUTO setting, slow cooker will begin

cooking on HIGH and then will shift to LOW after approximately 2 hours of cooking time.

•For best flavor, use whole-leaf herbs and spices during initial preparation. If ground herbs and

spices are used, stir in during last hour of cooking.

•Many factors can affect how quickly a recipe will cook. The water and fat content of food,

its temperature, and the size of the item(s) will all affect the cooking time. Food cut into pieces

will cook faster than whole roasts or poultry.

•Recipes for vegetable-type casseroles must contain liquid to prevent scorching on the sides

of the cooking pot.

•If using a specific recipe, one item may be substituted for another, if an equal quantity is used.

For example, if recipe calls for a 12-oz. can of chicken broth, a 10-oz. can of tomato soup plus

2 oz. of something else (water, wine, canned tomatoes) may be substituted.

•Canned beans may be added directly to any recipe, but dried beans, especially red kidney

beans, should be soaked in water (if desired) and boiled first. After covering and boiling in

3 times their volume of unsalted water, add beans to recipe and discard water. Beans must be

softened completely before they are combined with sugary and/or acid foods, as these have

a hardening effect on beans. In this case, beans should be allowed to simmer until tender

(about 1-1/2 hour) after boiling.

Recipe Amounts

Recipes included have been designed to work in either a 4-qt. or 6-qt. slow cooker. However, they

may be adjusted to accommodate individual requirements. Use the number of servings suggested

by each recipe as a guideline. Some helpful tips:

•If using a 6-qt. cooker, recipe amounts may be increased by 1/2 (50%), but cooking time may

need to be extended.

•Remember the rule of substitution when increasing recipe amounts: Items may be substituted,

so long as they are replaced with an equal amount of something else.

RECIPES

Hot ‘n’ Tangy Wings

3-1/2 pounds chicken wings

1 cup bottled barbecue sauce

1/2 cup honey

1/2 cup cayenne pepper sauce (hot sauce)

1 teaspoon brown sugar

1 teaspoon dry mustard

1. Clean and dry chicken pieces. Cut and discard wing tips. Cut the wings at their joints

to make two separate pieces.

2. Place chicken pieces in broiler for 8-10 minutes until chicken is browned, turning pieces once.

Place chicken in slow cooker.

3. Combine barbecue sauce, hot sauce, honey, brown sugar and mustard in a mixing bowl.

Pour over wings. Place lid on slow cooker and cook on LOW for 4-1/2 to 5 hours or on HIGH for

2 to 2-1/2 hours. Approximately 38 appetizers.

Classic Vegetable Beef Stew

1 pound beef stew meat (1-inch pieces)

1 tablespoon vegetable oil

4 carrots, cut into 1/2-inch pieces

6-8 small red potatoes, quartered

1 red onion, cut into thin wedges

1 9-ounce package frozen cut green beans

1 16-ounce can tomatoes, cut up

1 green pepper, chopped up

1 10-ounce can condensed cream of mushroom soup

1/2 cup beef broth or dry red wine

1 envelope dry onion soup mix

1 teaspoon dried thyme or marjoram, crushed

1/2 cup water

1. Brown meat in hot oil. Drain fat.

2. Place meat, potatoes, carrots, onion, beans, tomatoes and green pepper in slow cooker.

3. Combine condensed soup, beef broth or wine, dry soup mix, thyme or marjoram, and water

in mixing bowl. Pour over meat.

4. Place lid on slow cooker and cook for 8 to 10 hours on LOW or 4-5 hours on HIGH.

Approximately 4-6 servings.

South of the Border Chili

1 pound ground beef

2 cloves garlic

1 jalapeño pepper, chopped up

3 teaspoons chili powder

1/2 teaspoon ground cumin

1 15-1/2 ounce can red kidney beans, drained

1 cup chopped celery

1 cup chopped red onion

1/2 cup green pepper

1 16-ounce can tomatoes, cut up (Mexican-style, if available)

1 10-ounce can tomatoes with green chili peppers

1 cup vegetable juice or tomato juice

1 6-ounce can tomato paste

shredded jack cheese

sour cream

1. Brown beef with garlic and jalapeño pepper. Drain fat. Mix in chili powder and cumin.

Cook an additional 2-3 minutes.

2. Combine beans, onion, green pepper, celery, undrained tomatoes, undrained tomatoes with

green chilies, vegetable juice or tomato juice, tomato paste. Mix. Stir in browned meat mixture.

3. Cover and cook on LOW for 10 to12 hours, or on HIGH for 4 to 5 hours. Serve in bowls. Add sour

cream and cheese to help “tame” the chili, if needed.

Kansas City BBQ Beans

2-1/2 cups dry navy or dry Great Northern beans

8 slices bacon, cooked, drained and crumbled into small pieces

1/2 pound lean, boneless ham, cubed

1 cup water

1/2 cup molasses

1 tablespoon dry mustard

1 teaspoon liquid smoke

3/4 cup packed brown sugar

2 tablespoons jalapeño pepper jelly

1. Wash beans and drain. Combine beans with 8 cups of water and bring to a boil. Boil for

10 minutes. Cover. Simmer for 2 hours. Drain.

2. Combine beans, bacon, ham, 1 cup water, molasses, dry mustard, liquid smoke, brown sugar

and jalapeño pepper jelly. Stir ingredients.

3. Place lid on slow cooker, and cook on LOW for 10 to 12 hours or on HIGH for 5 to 6 hours.

“Real” Sloppy Joes

3-1/2 pounds ground beef

1 cup chopped white onion

2 cloves garlic, minced

1/2 cup chopped green pepper

1/2 cup chopped red pepper

1 cup ketchup or bbq sauce

2 tablespoons vinegar

3 tablespoons brown sugar

1 tablespoon chili powder

2 tablespoons Worcestershire sauce

1. Brown meat and garlic, drain fat.

2. Place the remaining ingredients in slow cooker, mix. Combine meat mixture and mix.

3. Place lid on slow cooker and cook for 8 to 10 hours on LOW or 4 to 5 hours on HIGH.

Approximately 12-14 servings.

Tender & Tasty Pork Chops

5 pork chops, thick cut

1 tablespoon oil

1 10-3/4-ounce can condensed cream of mushroom soup

1/2 pound fresh mushrooms, sliced

1/4 cup dry white wine or chicken broth

1 clove garlic, minced

6 medium potatoes, cut into slices

1 teaspoon dried thyme

1/3 cup Dijon-style mustard

1/2 cup applesauce

1/2 teaspoon pepper

1. Heat oil and brown pork chops on both sides. Drain fat.

2. Combine soup, mushrooms, wine or chicken broth, garlic, thyme, mustard, applesauce and

pepper. Add potatoes and onion. Stir. Place in slow cooker and add pork chops on top.

3. Cover and cook on LOW for 7 to 8 hours, or on HIGH for 3-1/2 to 4 hours. 6 servings.

Santa Fe Chicken

6 chicken breasts

2 tablespoons brown sugar

1 tablespoon quick-cooking tapioca

1 tablespoon vinegar

1/2 cup ketchup

1/2 teaspoon crushed red pepper

1 teaspoon Worcestershire sauce

1 teaspoon liquid smoke

1/2 teaspoon cayenne pepper sauce (hot sauce)

1 lime, squeezed

1. Rinse chicken and pat dry.

2. Add all ingredients into slow cooker and stir. Place chicken in slow cooker and cover

with mixture.

3. Place lid on slow cooker and cook for 10 to 12 hours on LOW or 5 to 6 hours on HIGH.

Este aparato es para USO DOMESTICO SOLAMENTE y puede ser enchufado en cualquier

IMPORTANTE

Durante los primeros minutos de su uso inicial, usted notará humo y/o un ligero olor. Esto es normal

y deberá desaparecer rápidamente. Esto no ocurrirá después que el artefacto ha sido usado unas

cuantas veces.

ANTES DE USAR

1. Desempaque cuidadosamente la olla.

2. Lave en agua tibia jabonosa la olla y la tapa de vidrio. Enjuague bien y séquela completamente.

3. Limpie las superficies interior y exterior de la base con un paño suave y húmedo para remover

las partículas de polvo acumuladas durante su embalaje. NUNCA SUMERJA EN EL AGUA

U OTRO LIQUIDO LA BASE, SU CORDON O ENCHUFE.

4. La olla deberá hacerse funcionar antes de su uso inicial. Después de limpiar la unidad, coloque

la olla dentro de la base. Vierta en la olla 2 tazas de agua y cúbrala con la tapa. Enchufe la olla

en el tomacorriente y encienda la posición ALTA. Déjela funcionar por aproximadamente

20 minutos.

5. Después de 20 minutos, apáguela y desenchúfela. Deje que la unidad se enfríe. Retire la olla

y deseche el agua. Enjuague la olla, séquela completamente y vuélvala a colocar en la base.

COMO USAR UNA OLLA DE BARRO

Como cualquier cerámica fina, las ollas de barro pueden quebrarse o romperse si no son

manejadas adecuadamente. Para prevenir daños:

•Nunca exponga la olla a severos cambios de temperatura. NUNCA la coloque donde pueda

estar en contacto directo con el calor (por ejemplo, en la hornilla o bajo la asadera).

NO la coloque en el congelador.

•Coloque siempre los alimentos en la olla cuando esté a la temperatura ambiente; luego coloque

la olla en la base antes de encenderla.

• NUNCA caliente la olla cuando esté vacía.

•Para evitar daños en el interior de la olla, use siempre utensilios de cocina hechos de plástico,

jebe, madera o de metal con el filo suave. NO use utensilios de metal filudos, como los

tenedores o cuchillos.

•Las ollas pueden ser lavadas en la máquina de lavar platos, pero no su tapa de vidrio.

Para evitar que se rompa, no ponga la tapa de vidrio en el microondas. Cuando retire una olla

del microondas, asegúrese de usar agarraderas o guantes.

•No use la olla para recalentar los alimentos o para guardar la comida en general.

•Use siempre las agarraderas o guantes cuando retire la olla de la base. No coloque la olla

directamente en el mostrador o la mesa; use un trébede o cojincillo.

COMO USAR •Desenchufe la unidad y deje que se enfríe después de haberla usado. No vierta agua fría en la

olla de barro cuando esté caliente.

COMO CUIDAR LA TAPA DE VIDRIO

Para prevenir que se raje o rompa la tapa de vidrio, lo cual puede causar lesiones personales, la

tapa debe ser tratada con especial cuidado.

PRECAUCIONES: Las tapas de vidrio pueden quebrarse si son expuestas directamente al calor o

sujetas a severos cambios de temperatura. Rajaduras, roturas o arañazos profundos pueden

también debilitar la tapa.

• MANTENGA LA TAPA LEJOS DEL asador, microondas, hornillas, o salideros de calor del horno.

Si la tapa ha sido utilizada en muchos de estos lugares, no la use nuevamente, aún si no hay

señales de daño. Ordene una tapa de repuesto inmediatamente.

• SI LA TAPA LLEGARA A ROMPERSE, RAJARSE O ARAÑARSE, no la use. Deséchela y ordene

un repuesto. Vea el cupón para más detalles.

• DEJE SIEMPRE QUE SE ENFRIE LA TAPA en una superficie seca resistente al calor antes

de tomarla. No la coloque en superficies frías o mojadas, ya que éstas pueden romperla

o rajarla.

COMO USARLA

Usar una olla para cocimiento lento es fácil pero diferente de la forma convencional. Para ayudar,

este manual contiene muchos consejos y recetas para cocinar satisfactoriamente en forma lenta.

Muchos más libros con recetas para cocinar en forma lenta están disponibles en bibliotecas y

librerías. Mantenga estos materiales a la mano ya sea cuando está preparando recetas favoritas

o tratando algo nuevo.

Esta olla para cocimiento lento tiene tres posiciones: BAJA, ALTA Y AUTOMATICA. Use las

indicaciones recomendadas ofrecidas en la receta que está usando para determinar el tiempo de

cocción y posición para el calentamiento. Los platos pueden ser preparados bastante tiempo antes

de la hora de la comida y cocinado al tiempo regulado de manera que la comida esté lista para ser

servida a la hora convenida. La regla general para la mayoría de la ollas para cocimiento lento

para la combinación de carne y vegetales es:

Otras recetas favoritas pueden ser adaptadas a la olla para cocimiento lento. Todas las horas

listadas en la siguiente tabla son aproximadas y deberán servir solamente como guía para el

cocimiento.

1. Prepare la receta de acuerdo a las instrucciones.

2. Coloque los alimentos en la olla y cúbrala.

3. Enchufe la olla en un tomacorriente eléctrico y seleccione la posición deseada: BAJA, ALTA

O AUTOMATICA.

4. Cuando la comida esté lista a ser servida, apague la olla y desenchúfela.

5. Retire la tapa.

PRECAUCION: Cuando retire la tapa, sujete la perilla y levántela para dejar que salga el vapor

antes de retirar la tapa por completo. Para evitar quemaduras, sostenga siempre la cubierta para

que escape el vapor lejos de las manos y cara.

6. Sujete la olla por las asas y retírela de la base.

7. Sirva el contenido. Si sirve directamente de la olla, coloque siempre un trébede o cojincillo

protector debajo de la olla antes de colocarla en la mesa o en el mostrador.

CUIDADO Y LIMPIEZA

Este artefacto no contiene piezas que puedan ser reparadas por el usuario. No trate de repararlo

usted mismo. Si necesita reparación remítalo a personas calificadas.

PRECAUCIONES:

• Desenchufe siempre la unidad y deje que se enfríe antes de limpiarla.

•Trate la olla y la tapa con mucho cuidado. Evite golpear la olla o la cubierta contra el grifo

u otras superficies duras.

•No toque los lados de la base de la olla mientras los alimentos se están cocinando. Siempre

use agarraderas en la base. Use agarraderas para ollas o guantes para levantar la olla.

PARA LIMPIAR:

Este artefacto debe ser limpiado después de cada uso.

Después que la unidad se ha dejado enfriar, lave la olla y la cubierta en agua tibia jabonosa.

Enjuague bien y séquela. Si la comida se pega a la superficie de la olla, llénela con agua tibia

jabonosa y déjela por unas cuantas horas antes de limpiarla.

Limpie la superficie del interior y exterior de la base con un paño suave y ligeramente humedecido

o una esponja. NUNCA SUMERJA LA BASE EN EL AGUA.

NUNCA USE LIMPIADORES ABRASIVOS O COJINCILLOS DE METAL PARA LIMPIAR LA OLLA

O LA BASE, YA QUE ESTO PUEDE DAÑAR LAS SUPERFICIES.

Lavado en la lavadora de platos

La olla de cerámica y la tapa de vidrio pueden ser lavadas en la lavadora de platos. Para prevenir

daños, ubíquelas en la parrilla para que no se golpeen una con la otra mientras se están lavando.

Limpieza especial

Si la olla se manchara, límpiela con un limpiador no abrasivo o aplique una pasta de soda de

hornear con un paño suave. Para remover las manchas de agua o los depósitos de minerales,

limpie con vinagre blanco destilado, o vierta una pequeña cantidad dentro de la olla y déjela

remojando. Después de limpiarla, lave la olla en agua tibia jabonosa, enjuague y séquela.

PARA GUARDAR:

Asegúrese que todas las partes estén limpias y secas antes de guardarla. Guarde el artefacto en

un lugar limpio y seco. Nunca la guarde mientras esté caliente o mojada. Para guardarla, coloque

la olla dentro de la base y la tapa de vidrio sobre la olla. Nunca enrolle el cordón ajustado

alrededor de la unidad; manténgalo suavemente enrollado.

CONSEJOS UTILES EN EL USO DE LA OLLA PARA COCIMIENTO LENTO

•La tapa no cierra herméticamente pero debe ser centrada en la olla para mejores resultados.

No retire la tapa innecesariamente – esto hará que se pierda mucho calor.

•No es necesario mover los alimentos cuando se está cocinando lentamente. Sin embargo,

si cocina en posición ALTA (HIGH), el mover ocasionalmente le ayudará a distribuir los sabores.

•Para mejores resultados, la olla debe estar llena por lo menos hasta la mitad.

•Si cocina sopas o estofados, deje un espacio de 2 pulgadas entre la comida y la parte de arriba

de la olla, para que los ingredientes puedan llegar a hervir.

•Las carnes menos suaves y más baratas son mejores candidatas para el cocimiento lento que

otras variedades más caras. Cuando sea posible, remueva el exceso de grasa antes de

cocinarla. Si la receta recomienda dorar la carne, dórela en la hornilla usando otra olla antes

de colocar la carne en la olla para cocimiento lento.

•Añada a la olla pescado fresco o descongelado o mariscos una hora antes de servir, ya que

estos ingredientes pueden deshacerse durante las largas horas de cocimiento.

•Ya que los vegetales crudos usualmente toman más tiempo que las carnes para cocinarse,

corte los vegetales en pedazos tipo bocaditos (cerca de 1/2 pulgada de diámetro) antes de

añadirlos a la olla.

•Si la receta recomienda leche, crema agria o cualquier otro producto lácteo fresco, añádalos

justo antes de servir, ya que estos ingredientes tienden a cortarse durante las largas horas de

cocimiento. Si prefiere sustituya con cremas de sopas condensadas (sin diluir) o leche

evaporada. El queso procesado puede ser sustituido por queso añejado naturalmente.

•Arroz o pastas pueden ser cocinados por separados o añadidos sin cocinar a las recetas no

más de dos horas antes de servir. Si añade pasta cruda, deberá de haber en la olla por lo

menos 2 tazas de líquido. Mueva ocasionalmente para evitar que las piezas se peguen unas

con otras.

•Para hacer los jugos más espesos o para hacer salsas al final del proceso de cocción, haga

una mezcla consistente de 2 a 4 cucharadas de maicena o harina y 1/4 taza de agua

o 2 cucharadas de mantequilla. Retire la comida de la olla, dejando el jugo. Añada las mezclas

al jugo, mueva el control a ALTA (HIGH) y mueva hasta que el líquido espese.

•No se preocupe si la comida se cocina un poco más de lo especificado. Recuerde, la olla para

cocimiento lento - como lo indica su nombre - cocina muy lentamente.

•Para mantener las comidas calientes hasta servir, mueva el control a la posición BAJA (LOW).

ADAPTANDO RECETAS

Consejos generales

•La posición BAJA (LOW) o AUTOMATICA (AUTO) es recomendada para un cocimiento para

todo el día. La mayoría de las combinaciones de carnes y vegetales requieren por lo menos

7 horas en BAJA (LOW). En la posición AUTOMATICA (AUTO), la olla comenzará a cocinar

en posición ALTA (HIGH) y luego cambiará a BAJA (LOW) aproximadamente después de 2 horas

del tiempo de cocción.

•Para mejor sabor, use las hojas de las hierbas enteras y las especias durante la preparación

inicial. Si son usadas hierbas en polvo o especias, agréguelas durante la última hora

de cocción.

•Muchos factores pueden afectar cuan rápido una receta se cocinará. El contenido de agua

y grasa de los alimentos, su temperatura y el tamaño del(los) producto(s) afectarán el tiempo de

cocción. Los alimentos cortados en piezas se cocinarán más rápido que los asados enteros

o las aves.

•Las recetas para vegetales tipo guisos deben contener más líquido para prevenir que se pegue

en los costados de la olla.

•Si usa una receta específica, un producto puede ser sustituido por otro, si es usada una

cantidad igual. Por ejemplo, si la receta recomienda una lata de 12 oz. de caldo de pollo puede

ser sustituida por una lata de 10 oz. de sopa de tomate más 2 oz. de algo más (agua, vino,

tomates enlatados).

• Frijoles enlatados pueden ser añadidos directamente a cualquier receta, pero los secos,

especialmente los rojos, deben ser remojados en agua (si lo desea) y hervidos primero.

Después de taparlos y dejarlos hervir en 3 veces su volumen de agua sin sal, añada los

frijoles a la receta y bote el agua. Los frijoles deben ser ablandados completamente

antes de ser combinados con alimentos dulces y/o ácidos, ya que estos tienen el efecto

de endurecer los frijoles. En este caso, los frijoles deben ser dejados para que hiervan

a fuego lento hasta que estén blandos (cerca de 1-1/2 hora) después de hervidos.

Cantidades en las recetas

Las recetas incluidas han sido diseñadas para ser preparadas en cualquiera de las ollas de 4 ó 6

cuartos. Sin embargo, pueden ser acomodadas para ajustarse a los requerimientos individuales.

Use el numero de porciones sugeridas por cada receta como guía. Algunos consejos:

•Si usa una olla de 6 cuartos, las cantidades de las recetas pueden ser aumentadas por la

1/2 (50%), pero el tiempo de cocción necesita ser extendido.

•Recuerde la regla de la sustitución cuando aumente las cantidades en la receta: Los productos

pueden ser sustituidos, siempre y cuando sean reemplazados con una cantidad igual de

algo más.

RECETAS

Alas picantes y jugosas

3-1/2 libras de alas de pollo

1 taza de salsa de barbacoa

1/2 taza de miel

1/2 taza de salsa de pimentón (picante)

1 cucharadita de azúcar negra

1 cucharadita de mostaza en polvo

1. Limpie y seque las piezas de pollo. Corte y bote las puntas de las alas. Corte las alas en su

coyuntura para hacer dos piezas separadas.

2. Coloque las piezas de pollo en el asador de 8 a 10 minutos hasta que se doren, volteándolos

una vez. Coloque el pollo en la olla para cocimiento lento.

3. Combine la salsa barbacoa, salsa picante, miel, azúcar negra y la mostaza en un tazón. Vierta

sobre las alas. Coloque la tapa en la olla y cocine en posición BAJA (LOW) por 4-1/2 a 5 horas

o en ALTA (HIGH) por 2 a 2-1/2 horas. Aproximadamente 38 aperitivos.

Estofado clásico de carne y vegetales

1 libra de carne para guisos (piezas de 1 pulgada)

1 cucharada de aceite vegetal

4 zanahorias, cortadas en piezas de 1/2 pulgada

6-8 papas coloradas pequeñas, cortadas en cuatro

1 cebolla colorada, cortada en rajas delgadas

1 paquete de 9 oz. de habichuelas verdes congeladas

1 lata de 16 oz. de tomates enlatados, cortados

1 pimiento verde, picado

1 lata de 10 oz. de crema de sopa condensada de champiñones

1/2 taza de caldo de res o vino tinto seco

1 sobre de sopa de cebolla seca

1 cucharadita de tomillo seco o mejorana, picada

1/2 taza de agua

1. Dorar los pedazos de carne en aceite caliente. Escurrir y sacar la grasa.

2. Colocar en la olla la carne, papas, zanahorias, cebolla, habichuelas verdes, tomates

y pimientos.

3. Combinar en un tazón la sopa condensada, caldo de res o vino, la sopa seca, tomillo

y mejorana y el agua. Verter sobre la carne.

4. Colocar la tapa en la olla y cocinar de 8 a 10 horas en BAJA (LOW) o 4 a 5 horas en

ALTA (HIGH). Aproximadamente 4 a 6 raciones.

Chili del sur de la frontera

1 libra de carne de res molida

2 dientes de ajo

1 ají jalapeño, picado

3 cucharaditas de chili en polvo

1/2 cucharadita de comino en polvo

1 lata de 15-1/2 oz. de frijoles colorados, colados

1 taza de apio picado

1 taza de cebolla colorada picada

1/2 taza de pimientos verdes

1 lata de tomates de 16 oz., picadas (si lo hubiera, estilo mexicano)

1 lata de tomates de 10 oz. con ají chili verdes

1 taza de jugo de vegetales o jugo de tomate

1 lata de 6 oz. de pasta de tomate

queso jack desmenuzado

crema agria

1. Dore la carne con ajo y ají jalapeño. Escurra y saque la grasa. Mezcle el chili en polvo

y comino. Cocine de 2 a 3 minutos adicionales.

2. Combine los frijoles, cebolla, pimientos verdes, apio, los tomates sin colar, los tomates con chili

verdes sin colar, el jugo de vegetales o jugo de tomate y la pasta de tomate. Mezcle. Agregue

a la mezcla de la carne dorada.

3. Cubra y cocine en BAJA (LOW) por 10 a 12 horas o en ALTA (HIGH) por 4 a 5 horas. Sirva en

tazones. Si fuera necesario, añada crema agria y queso para ayudar a “suavizar” el chili.

Frijoles Kansas City a la barbacoa

2-1/2 tazas de frijoles blancos o Great Northern

8 rajas de tocino, cocinado, colado y despedazado en pequeños trozos

1/2 libra de jamón sin grasa, ni hueso, cortado en cuadraditos

1 taza de agua

1/2 taza de melaza

1 cucharada de mostaza seca

1 cucharadita de salsa ahumada

3/4 taza de azúcar negra

2 cucharadas de jalea de ají jalapeño

1. Lave los frijoles y cuélelos. Combine los frijoles con 8 tazas de agua y póngalos a hervir.

Hiérvalos por 10 minutos. Tápelos. Déjelos hervir por 2 horas. Cuélelos.

2. Combine los frijoles, tocino, jamón, 1 taza de agua, melaza, mostaza, liquid smoke, azúcar negra

y jalea de ají jalapeño. Mueva todos los ingredientes.

3. Coloque la tapa en la olla y cocine en BAJA (LOW) por 10 a 12 horas o en ALTA (HIGH)

por 5 a 6 horas.

Sloppy Joes “Real”

3-1/2 libras de carne molida

1 taza de cebolla blanca picada

2 dientes de ajo, molidos

1/2 taza de pimiento verde picado

1/2 taza de pimiento rojo picado

1 taza de ketchup o salsa barbacoa

2 cucharadas de vinagre

3 cucharadas de azúcar negra

1 cucharada de chili en polvo

2 cucharadas de salsa Worcestershire

1. Dore la carne y el ajo, escurra y saque la grasa.

2. Coloque los ingredientes restantes en la olla y mézclelos. Combine la carne y mezcle.

3. Coloque la tapa en la olla y cocine por 8 a 10 horas en BAJA (LOW) o 4 a 5 horas en ALTA

(HIGH). Aproximadamente rinde de 12 a 14 porciones.
