3-1. INTRODUCTION This section provides explanations of all controls, along
with operating procedures and daily maintenance. Read the
Introduction, Installation and Operation Sections before
operating the unit.
To access the controls, the bottom, front panel must be
removed by pulling out on one corner of the panel and
unsnapping it from the clips.

3-3. STARTUP
Beforeusing theheatedexpresscabinet,thoroughly cleantheunit
asdescribed in the Cleaning Procedures Section ofthismanual.
1. Turnthepower switch to the ONposition.
2. If the heat valuesfortheshelveshave not been set, pulloutonone
cornerofthebottomfrontpanel,andunsnapitfromtheunit, to
accessthecontrols.
3. Press and hold and use tosetthe heat value ofthe
base(or bottom) shelf. It canbe set from “OFF”to a maximum
of“10”.
Theupper heat settings read 1,2, 3, etc. 1 meaning theheat is on
10%ofthetime, 10 meaning theheatison 100% of thetime.
If“LOC”showsonthedisplaywhentryingtosettheheatvalue,
thismeansthecontrolsare locked and the settings cannotbe
changeduntil unlocked intheSpecialProgramMode.
4. Pressandhold each shelf button anduse to set the heat
valueto eachcorrespondingshelf.
Thesecanbe set from“OFF”to a maximum of“10”. Use the
diagrambelow thebuttonstofind whichbuttoncontrolswhich
shelf. Ex: Pressandhold to set the bottom shelf heat
value.
Aheatvaluesettingof8 for the base and allshelvesisrecom-
mendedtohold prepackaged whole chickens .
5. Once controls are set, replace front panel by lining up the clips
andfirmlysnappingthemintoplace.
6. Allow unit to preheat forabout30minutes.
7. Prepackaged food productscan now be placed oneach shelf.
Allshelf surfaces arehot! Burnscouldresult!

3-4. OPERATIONWITH
PRODUCT 1. Place the hot,prepackaged product oneach of the shelves.
Toassurequality product, stacking prepackaged productisnot
recommended.
2. Serve the product first thathasbeeninthecabinetthe longest.
3-5. CLEANING
PROCEDURES 1. Turnpower switch toOFF.
2. Disconnect the electricalsupplytothecabinet.
Toavoid burns,allow theunit tocool beforecleaning.
3. Remove all productfromthecabinet.
4. Wipedowneach shelf with asoftcloth, soap and water.
Thepanelsinthe base (bottom shelf) canberemovedformore
thoroughcleaning. The holes inthecenterofeachpanelhelp in
removingthepanels.
5. Clean the exterior of the cabinet withadampcloth.
6. Cleanthesideglasswithnon-streakingliquidglass cleaner anda
softcloth.. Donot use abrasive cleaners.
Do not use steel wool, other abrasive cleaners or
cleaners/sanitizers containing chlorine, bromine, iodine
or ammonia chemicals, as these will deteriorate the
stainless steel material, shorten the life of the unit, and
scratch the black coating on the side glass.
Do not use a water jet (pressure sprayer) to clean
the unit, or component failure could result.
7. Allow the unittothoroughlydrybeforeaddingmore product.

3-6. SPECIALPROGRAM
MODE Thismodeincludesthelock/unlockfeature,controlinitialization,and
testingof the outputsanddisplays.
1. Turnpowerswitchoff.
2. Press and hold both whileturning on the power switch.
3. “SP” shows in display,followedby“P=L”orP=U”.
4. Press toeitherlock(“P=L”)orunlock(“P=U”)thecontrols.
Lockingthe controlswillnotallowanyonetochange the heat
valuesof theshelvesuntilthecontrolsare unlocked.
5. Press .
6. “In”showsinthedisplay. Press and hold or to
re-initializethe controls, which sets allheatsettingsto“OFF”,orto
factorysetparameters. “In3”,“In2”, “In1” shows in the display,
followedby“In-”,“SyS”,indicatingtheinitializationiscomplete.
7. Press .
8. “OP”showsinthedisplay. Press and release theshelfbuttons (1
to4) to turnoff and onthe heat outputs for each shelf. Press and
release to turn off and on the base heat outputs. Press
toturnoffandonall displays and outputs.
9. Press and hold to exit Special Program Mode.
Pressandhold at any timetoexit the SpecialProgram
Mode,or if nobuttons are pressed for1 minute, controlsauto-
maticallyexitsSpecialProgramMode.
