Brief Introduction
Bread Slicer GF-18 has been carefully designed to service today’s modern
bakery. This machine is used for slicing the toast and soft bread . It will save
labor and avoid unevenness made by manual work to ensure that bread is
neatly and accurately sliced up.
With the gravity, the bread can be downwards along the chute easily. We
can also put pieces of bread at one time to slice them into the same width.
And the slicing thickness can be made from 9mm to 48mm when
manufacturing the machine.
Owners and operators should carefully read and familiarize themselves
with this entire manual before attempting to operate or service this machine.
Complying with this manual will ensure years of safe and trouble-free
operation.
All of the information, illustration and specification contained in this manual
are based on the latest product information available at the time of printing.

Installation
After uncrating your slicer, inspect the machine for any damage that might
have occurred during shipment. Report any damage to us before
proceeding to operate or service this machine. Never attempt to operate
the machine with damaged parts.
Select a location for your slicer with sufficient room for operating, cleaning
and servicing, and the floor must be solid and level. After locating the
machine, skid the four castors to fix the machine.
Remove the rear cover to get access to the 2 rear screws. At the front, open
door and remove the crumb basket.
The loading ramp has been stored for shipping against the front top part of
the machine. Rotate the ramp and fix the link with the frame at the rear. Put
the safety guard cover in place. Mount the bread guides on the ramp. Be
ready to lift the blower table.
Remove all the packing meterial. Remove the extra blades shipped in the
crumb basket and keep them in a safe place.
Electric Connection
Connect the electric cables to the machine with a circuit breaker which is
about 1.5m high over the ground.
Connect the right power supply according to the indication on the machine
nameplate.
The machine must be in ground protection.

OPERATION

Operation Step
1). At the start of the day, release the EMERGENCY STOP button.
2). Place your bread on the rear table and adjust the loaf guides.
3). Adjust the pressure plate (comb) in relationship with the height of the
bread and its regularity. For various height, let the comb “floating”.
4). Turn the POWER switch and press the START button.
5). Pack the sliced bread.
6). For continuous cutting at the same speed, reload directly the ramp and
follow the cycle: one bread out, one bread loaded.
7). To push out the last bread, use the lever at the right side of the machine.
Slowly apply the Bread Pusher or let it work.
8). If necessary during the job, use the STOP button.After daily work, press
the red EMERGENCY STOP button and isolate the machine from the
power supply.
9). The crumb basket is in the front door.
Replacement of the blades
1). Pivot the top cover around the blades.
2). Remove the front table.
3). Unscrew the plastic connecting rod which maintain the left part of the
front blade frame to the machine frame.
4). Turn down the front blade frame against end stops.
5). To avoid unnecessary injuries, cover the blades of this frame.

6). Now you are working on the other (rear) blade frame remaining
attached on the machine frame.
Warning:
−Do not unscrew more than 4 blades at the same time to avoid the
breaking of the other blades. Place and tight first the 3 new blades
leaving a blade space to unscrew and pull out 4 other blades in a more
safety way. Then place and tight this time the next 4 new blades. Go on
to change blades, 4 by 4, until all of them have been replaced.
−You can appreciate the tension of the blade by comparison with the
closer one in place.
−Don’t tight too much. A good torque is about 2.5 to 3 mN.
−Now, operate on the front frame. Change the blades four by four as
previous steps. When finished, pivot the front frame to the vertical
position and screw the plastic connecting rod.
−Check the alignment of blades between the 2 frames, in a same level at
+/-0.5 mm.
−Check the distance between blades to avoid friction with the pressing
plate. Act on the small blade levers if necessary.

Attention
To ensure that your bread slicer offers you total satisfaction for many years
and to benefit from your one-year guarantee, we advice you to take note of
the following recommendations.
Request the help of you dealer.
ENVIRONMENT
This machine is designed for professional bakers. It must be used by onlyy
one person at a time. It must be used indoors. This machine has a noise
level less than 85dB.
The working environment temperature should be controlled between 5℃
and 40℃, and the environment relative humidity must be controlled
between 0 and 85%.
STARTUP
1). Before connecting your machine to the power supply, ensure that the
rated voltage of the machine (see identification plate on the back of the
machine) matches the voltage of the power network.
2). The machine must be connected through a 16A earth fuse. The socket
must be protected by fuses.
3). Check that the blades are not slack.
4). At startup, adjust the loading of your machine to the consistency of your
bread.
RECOMMENDATION
After cutting about 100 loaves, check again that the blades are still tight and
that they do not encounter any obstacle.

CLEANING AND MAINTENANCE

Daily Cleaning
−Clean cover and tables with soft brush or damp cloth.
−Empty the crumb basket.
Warning
−Always disconnect the power supply before servicing.
−Be extremely careful while cleaning the rear table and around the slicing
blades, as contact with blades could cause severe injury.
−Note that the machine couldn’t be cleaned with a running water.
Maintenance
−In normal use, the blades have to be replaced every 20 to 30 000 cuts.
On a gravity machine, it is recommended to replace the blades earlier to
get the maximum efficiency.
−To test the sharpness of the blades, check the center of the frame where
they are more often worn out. At both side of the frame they are probably
always sharp.
−A bread which is cut with worn out blades, crash against the crust of the
bread and then the soft part will be slowly broken. In any case the
number of the rolled soft particles between the bread slices will be
increasing.

TROUBLE SHOOTING

1.The machine has stopped completely.
−Have you plugged the machine in?
−Is there power in the socket?
−Is there EMERGENCY STOP button unlocked?
−Has the fuse blown?
2.The slices are irregular in thickness.
−Is the space between the blades irregular? If so, check whether the
frames are stable.
−Are the blades tight? If not, tighten them but not excessively.
3.The bread vibrates in blades.
−Are the frames correctly aligned?
4.The bread is sliced too slowly.
−Replace the blades if they are blunt.
−Adjust the comb if the bread jumps.
